If you're planning on going pure melee, the Warrior has the best stats, but if you'd want to dabble in a paladin style playthrough, Knight is a bit more diverse in its stat distribution. It depends on how important Att will be to your build. Warrior has more Strength, Vigor, Endurance, & Luck.

Pure str though, with no dex it's a warrior Wouldn't say its so dead sure, 3 less strength for 4 more vitality and tougher starting gear seems quite good for a strength build, plus if you feel like luck is a dump stat the lower value of the knight shines.

In that case OP just decide whether you wanna go full melee or hybrid.The knight's starting roll is fine in DS3. And Cleric and build as a Knight. Knights have the long sword, which is a nice versatile weapon, but the axe should be fine as well. Now I don't know how similar weight is in DS3 to DS1 but the armor knight starts with in DS1 really hindered your rolls. Warrior has a one level advantage for quality if you don't care about ATT.
